Baking is something I enjoy very much. I like to think sometimes that I'm on The Great British Bake off - only if I was ever good enough. I bring to you a light tasty Berrylicious Strawberry Victoria Sponge Cake. The inspiration and recipe for this delightful cake came from the wonderful Delia. I've always been a fan of cakes and sweets and baking them yourself just makes it that bit more exciting. Lets get started: We cannot bake a cake without ingredients so here is what you need: 115g Self-Raising Flour 1/2 Teaspoon Baking Powder 2 Large Eggs 115g Butter 115g Golden Caster Sugar 1/2 Teaspoon Pure Vanilla Extract 200 ml Double Cream Strawberries Icing Sugar Lets bake - Method: How to make the cake: Step 1: Start by mixing together the Flour, Baking Powder, Eggs, Butter and Caster Sugar together and the mix in the Vanilla Extract. Step 2: Grease a cake tin (24cm) with butter to avoid the cake from sticking. I had a disaster getting my cake out of the tin. In the end it turned out ok, but make sure to grease those tins. Step 3: Pour the mixture into the tin and bake for 25-30 minutes. Step 4: Repeat steps 1-3 to make another cake. Step 5: Place the cakes on a wire wrack and leave them to fully cool. Now it's time to decorate the cake: Decorating the cake is entirely up to you. Be creative and decorate it how you like. I added whipped Double Cream to one side of the cake and then added some Strawberry Jam to the other and out them together, a bit like making a sandwich I suppose. I then melted some Jam and drizzled that over the top of the cake. I cut lots and lots of strawberries in half and placed them around the top of the cake. And there you have it, a deliciously moist and scrumptious cake. Let your imagination run wild with the decorating. Show me your amazing creations in the comments below.
